So it’s back to school time and I was trying to come up with fast breakfast options that my daughter will actually eat. (and me too, when I’m busy and forget to eat myself. Whoops, LOL) I found these summertime popsicles recipes that are great substitute for breakfast too! And BONUS, they are healthy with no added sugar!!!
I’m so glad that there’s no rule saying popsicles can’t be healthy as well as fun! When you make your popsicles with Complete by Juice Plus+, each one will be full of protein, fiber, vitamins, minerals, and antioxidants.
Berry Delight Popsicles Makes 6 popsicles
The trick to keeping the fruit suspended in the yogurt is to mix Complete by Juice Plus+ in by hand, rather than using a blender. This makes a thicker base that keeps the pieces of fruit spread throughout the popsicle. It also reduces the yield when compared to other recipes, as the yogurt is more dense. · 2 scoops (1/2 cup) French Vanilla Complete by Juice Plus+ shake mix · 2 cups plain yogurt (for a vegan version, try coconut, almond, cashew, or pea protein yogurt) · 1 cup strawberries, chopped into small pieces · 1 cup blueberries · Optional: For extra sweetness, you can add a dollop of honey or a pinch of stevia Mix Complete into the yogurt with a fork.
